I would assume the reason there are no meat products made to look and taste like veggies is because nobody has a diet that consists entirely of meat products. Humans could not survive on a diet that excludes all plant-based products, so anybody who wants a food that looks/tastes like vegetables will just eat the actual vegetables. There are, however, people who exclude all meat-based products from their diet. People do this for various reasons (health, ethical, religious, etc.), and humans are perfectly capable of being healthy on that kind of diet. A lot of these people used to eat meat, and still want to eat things that have a similar taste.
