A. I LOVE this one..It's so good! Ingredients - Graham Crust: 1-3/4 cups of crushed graham crackers 1/2 cup melted butter or margarine 2 tablespoons sugar Filling 1 eight ounce softened creamed cheese 1 cup powdered sugar 2 packages of dessert topping mix 1 cup milk Graham Crust: Mix together ingredients. Press into 8 x 12-inch loaf pan and bake for 15 minutes at 350 degrees. Filling: Mix creamed cheese and powdered sugar. In a separate bowl, mix the rest of the ingredients. Add this mixture to the creamed cheese mixture and pour into cooled graham cracker crust. Chill mixture for several hours. When firm, top with one can of cherry pie filling

Good BAKED pineapple cheesecake recipe with the pineapple IN the cheesecake, NOT on top.?
Q. I've looked all over the net, and have only found plain cheesecake with pineapple sauce, or the cold "gelatin and coolwhip" type fake cheesecake. Please if you could lay a good recipe on me that you have actually made yourself. Thanks! I never knew it would be so hard to find this recipe.

A. The acid content in the pineapple often breaks the cheesecake batter while baking. That's probably why you're having a hard time finding the recipe. If you try crushed pineapple, squeezing out as much liquid as possible, it may work. The only problem with that is when you drain out all the juice, you also take away a lot of the pineapple flavor. If you want to try it anyway, add a cup and a half of the crushed, drained pineapple to your favorite baked cheesecake recipe. Don't forget to bake your cheesecake in a bain marie (a waterbath)! A. You might try a Jell-O boxed cheese cake. You might also try a Philly cheese cake from the refrigerator section of the grocery. Those usually come out well, the only thing you do is get your favorite pre-made crust, that does not have to be baked, get the filling, and follow this instructions on the package, they come out pretty good.

Cheesecake recipe modification?
Q. I have a recipe for a cheesecake which calls for an 8" springform pan. I can only find 9" springform pans and I was wondering if I'd need to make any alterations to the cooking times or anything. The original recipe calls for 45 mins of baking at 325 degrees F. Would an extra inch to the diameter need a shorter baking time and if so, by how much?

A. I don't believe you would have any problems using the 9" springform pan...and I don't believe it needs any real alteration to the cooking time. The biggest change, obviously, is that your cheesecake won't be as thick...due to the change in the pan size. Watch the cheesecake. When the top just starts to split, it is done. IF the top becomes brown and flaked, you CAN remove that. (If you are covering it with fruit, no one will ever know) All of my cheesecake recipes call for a 8" pan and all I have is 9" also. Just keep an eye on the cheesecake when it nears the end of the baking time. (around 40 minutes)...you an also insert a toothpick in it, if it comes out clean...it is done. Q. If a cheesecake recipe calls for 1 and 1/4 cup of granulated sugar, and i substitute it with brown sugar instead, will it still taste the same? Will it look any different? Thank you! EDIT: What if i use half granulated sugar and half brown sugar?
